Quinoa White Bean Burgers

Dinner is done!! Serve each burger with a dollop of greek yogurt sauce. Enjoy!

While the burgers are cooking, make a nice greek yogurt dipping sauce. Use plain greek yogurt, some fresh lemon juice, and your choice of spices. I used Foxpoint seasoning and sweet curry powder from Penzy's Spices but you could use a simple blend of dried basil leaves and sweet curry powder to achieve the same result

Heat a skillet on medium high heat. Add 1/2 Tbsp olive oil. Heat. Mix all ingredients for your "burgers" together. Once skillet is hot, add 2 patties. Brown about 3-4 minutes per side. Repeat with other 2 patties, heating 1/2 Tbsp olive oil to skillet.

For the peppers, look to the Chop Wizard. Great kitchen gadget. This guy can dice or chop anything you need. Decided some red peppers would be tasty in these burgers plus gives you an additional boost of antioxidant powered beta-carotene to your meal!
