1 cup cooked quinoa
1 can rinsed cannellini beans
1/4 cup bread crumbs
1 Tbsp. cumin
1/2 Tbsp sweet curry powder
1/2 red pepper
6 oz plain greek yogurt
1 Tbsp dried basil leaves
1 Tbsp lemon juice
Boil about 1 cup water in small stock pot. Add 1/2 cup quinoa and reduce heat to medium low. Cover and cook 15-20 minutes until done. Meanwhile, mash beans in small mixing bowl. Dice red pepper. Add egg, bread crumbs, red pepper, cumin, curry powder, and cooked quinoa.
Heat 1/2 Tbsp olive oil over medium high heat in skillet. Once hot, add 2 quinoa patties. Cook about 3-4 minutes each side. Repeat same steps for remaining 2 patties.
While burgers are cooking, whisk together yogurt, basil, and lemon juice.
